Nutritious Vegetable Millets Khichdi Recipe for a Healthy Meal

Ingredients
  1. 15 gms Millet (you can choose any 1 millet)
  2. 15 gms Moong Dal or Green Moong (preferably sprouted if green moong)
  3. ½ Cup or 1 small bowl of veggies diced (carrot, green peas, french beans
  4. ¼ Cup  Bottle gourd diced optional
  5. 2 tablespoons chopped tomatoes
  6. ½ teaspoon chopped chillies
  7. 2-3 leaf of curry leaves (optional)
  8. ½ teaspoon fresh ginger grated
  9. 2-3 Cloves (optional)
  10. 2-3 black pepper whole(optional)
  11. ½ teaspoon mustard & cumin seeds
  12. ⅓ teaspoon turmeric powder
  13. ½ teaspoon coriander powde
  14. 2 tablespoon of A2 Gir Gow Bilona Ghee
  15. 1 teaspoon or as per your taste,Himalayan pink salt
  16. 1 ½  glass of Water or as per your requirement.
  17. Some fresh chopped coriander.
Pre-preparartion
  • Soak Millets & Dal separately for at least 8 hrs.
Method
  • Heat ghee in a mud pot, add cumin & mustard seeds, allow them to crackle.
  • Add ginger, chillies, black pepper, cloves, curry leaves & mix well.
  • Add all vegetables, spices & salt, mix well
  • Then add soaked millets & dal, saute for a min.
  • Mix well & add water.
  • Let it cook on slow flame till it’s half cooked then add veggies mix well, close  the lid & let it cook for another 15mins. Serve hot with some curd or green chutney.
