Delicious Ambali Recipe: A Perfect Start to Your Day
Ingredients
¼ cup or 4 tablespoon of any 1 millet – kodo, little, foxtail, barnyard or browntop, 6 Cups of water, Salt & cumin power as per your taste.
Method
- Wash ¼ cup of millets under running water 3 times & soak it for 4-8 hours in 2 cups of water.
- Discard the soaked water & cook millet on low flame with 4 cups of fresh water in a mud pot, occasionally stirring it.
- When the water has evaporated and millets are perfectly cooked, remove it from the gas stove.
- Ambali should be in kheer like consistency. If you feel that your cooked ambali has very little water then you can add some water and cook for a minute.
- Let it cool down.
- Cover it with a cloth and keep it in the same mud pot for 6-8 hours or overnight.
- Ambali is ready after 6-8 hours of fermentation.
- When you are about to eat, you can now add some cumin powder & salt as per your taste.
- Please do not add salt while preparing the ambali as it may affect the fermentation process.
- You can have this ambali with any dal, curry, chutney etc. Since ambali is a fermented form of millets hence it should be consumed within 6-8 hours of preparation and should not be taken post that.
- Do not reheat the ambali after it has fermented as it may kill the good bacteria present after the fermentation.
Ambali is the best way of millet that can be consumed. It is a fermented form of millets which can be made from any of the positive millets like kodo, little, foxtail, barnyard or browntop. Since it is fermented it has a good amount of healthy bacteria which aid in digestion and keep the gut healthy. It is very light and is easily digestible. People having chronic ailments are advised to take millets in the form of ambali only for 6 weeks. For healthy people it is advised to take ambali thrice a week.
